Smashed Potato Recipe

Since I am a great food lover, it is obvious that my mind always search for the aroma of delicious and Lips smacking cuisines. Potatoes are very addictive and can create magic to any recipe.

Hence I thought; why not to start my blog life with this king of vegetables(for Indians).

So here comes my first recipe dedicated to the King: Smashed Potatoes.

 

INGREDIENTS:

  • 5-6 yellow baby potatoes
  • 2 tablespoons olive oil
  • Dry Garlic Powder or 2-3 cloves freshly pressed Garlic
  • Oregano
  • Salt and freshly grounded black pepper

DIRECTIONS:

  1. Preheat microwave to 200 degrees C. at convection mode.
  2. Cook potatoes in a pot of boiling water until tender, about 15-20 minutes; drain well.
  3. Lightly oil a baking sheet or coat with nonstick spray. Place potatoes onto the prepared baking sheet and carefully smash the potatoes until flattened potato masher or fork, but still in one piece. Top with olive oil,dry powdered/ fresh garlic,oregano, black pepper and Salt as per taste.
  4. Place into microwave and bake for 18-20 minutes, or until golden brown and crisp.
  5. Turn Upside down the potatoes and repeat the process.
  6. Serve Hot.

My Style Experiment: You can add grated cheese, dry onion powder, bit of white vinegar(sprinkle it) and bake for 2-3 minutes until light brown to add some sour & cheesy taste and serve with your choice of dip…( Trust me I love it)
